Alpha galactosidase enzyme is an enzyme that catalyzes hydrolysis of the terminal α-galactosyl moieties of oligosaccharides and polysaccharides. These saccharides are abundant in plants, particularly in legumes and vegetables that make up important sources of food and feed. Human and most monogastric animals may not synthesize enough amounts of alpha galactosidase enzyme in gastrointestinal tracts to fully digest these galacto-saccharides in their diets. This indigestion can lead to various negative effects. Alpha galactosidase has therefore been produced industrially and used for food/feed processing and in diet supplements. Alpha-galactosidase can specifically catalyze the cleavage of alpha-galactosidic bonds and has the effect of transglycosidation. Therefore, the enzyme has a wide range of applications in feed, medical, food and chemical industries. In the feed industry, the addition of alpha galactosidase enzyme to the feed with soybean meal as the main protein material can effectively degrade the α-galactoside oligosaccharide anti-nutritional factors in soybeans and reduce the occurrence of animal gastrointestinal diseases. In actual production, due to the high production cost and low yield of alpha galactosidase, and its easy inactivation in the inevitable high temperature process of feed processing, its wide application is restricted.
The existing alpha galactosidase for production is mainly obtained through animal and plant extraction and microbial strain fermentation, which generally have defects such as low enzyme activity, poor thermal stability, and complex extraction technology.
