Garlic Extract Allicin is the principal flavourant of garlic and has antimicrobial, anticandidal (antiyeast), and antifungal properties; it also inhibits lipid synthesis in vitro. Allicin can be transformed into an unsaturated sulfoxide disulfide called ajoene, which has anticlotting (antithrombotic) properties.

The research and application of garlic extract allicin in aquatic products is relatively extensive. At present, most aquatic feeds contain allicin. The carp was fed with a premix containing 1% garlic residue, and the survival rate was increased by more than 15%, and the feeding coefficient was reduced from 2.98 to 2.28. Adding 1% of garlic residue and garlic residue premix to tilapia bait can increase survival rate by 5%, increase daily weight gain by 15%, and decrease bait coefficient by 14%. Feeding grass carp with the extracted garlic oil at 0.008% of the bait weight increases the survival rate by more than 15%; feeding tilapia increases the weight gain by more than 10%.
