32 Merino finishing lambs were fed barley straw and concentrate supplemented with palm oil (CTRL group), flaxseed (+LS group) and quercetin alone (+QCT group) or mixed with flaxseed bulk quercetin powder (LS+QCT group) was used to evaluate its effect on meat quality. After slaughter, the longissimus dorsi thoracic segment was used to study fatty acid content, and the longissimus dorsi was sliced under refrigeration to determine lipid stability. Flaxseed increased the content of long-chain n-3 polyunsaturated fatty acids (20:5n-3; 22:5n-3; 22:6n-3), but the conjugated linoleic acid content was significantly when used with quercetin increased (P<0.05). In addition, the addition of quercetin can reduce the proportion of saturated fatty acids, and the addition of flaxseed can reduce the lipid peroxidation of meat. Studies have shown that the addition of bulk quercetin powder is effective both nutritionally and commercially (shelf-life) when fed flaxseed diets.
